Ingredients:
- 2 cups of pancake mix (I like using Krusteaz Buttermilk)
- 2 large eggs
- 1 cup of sugar
- 1 cup of milk
- 1 cup of oil
- 1 red apple, peeled and shredded
- Ground cinnamon (to taste)
- 2 tbsp butter or margarine (cut into small chunks)
Directions:
Mix the batter: In a large bowl, combine the pancake mix, eggs, sugar, milk, and oil. Stir until the batter is smooth and there are no lumps. It's that easy!
Preheat the oven: Set your oven to 350°F (175°C) to get it ready for baking.
Prepare your baking pan: Grease your cake pan well. If you’re using an 8-inch round pan, this recipe will make two cakes. For muffins, place liners in your muffin tin—this recipe makes about 48 muffins.
Fill the pan: Pour the batter into your prepared pan or muffin cups, spreading it out evenly.
Add the apple topping: Sprinkle the shredded apple on top of the batter, making sure it's evenly distributed. A little cinnamon goes a long way, so lightly dust the apple with cinnamon for that perfect spice kick.
Add the butter: Dot the top of the cake or muffins with small chunks of butter or margarine. This will add a lovely richness as it bakes.
Bake: Place the pan in the preheated oven and bake for about 35 minutes. Since oven temperatures can vary, check for doneness by inserting a wooden toothpick into the center of the cake or a muffin—it should come out clean when done.
Once baked, let it cool for a few minutes before serving. Whether you enjoy it as a cake or muffins, this easy apple cinnamon treat will definitely become a favorite in your kitchen. Enjoy!
